The welcome
მობრძანდით, გენაცვალე!
Come in, my dear. The bread is still warm.
Khachapuri from the oven, shawarma off the spit and Georgian pastries baked every morning. Eat here, take it home, or order ahead and skip the line.

01 · The letters
Our name has nine letters. Our welcome has none.
Genatsvale is how Georgians say "my dear" to family, friends and every guest who walks in. Mkhedruli, the Georgian script, has thirty-three letters and no capitals. Our menu speaks it, with the English right underneath.

02 · The recipes
Recipes from the Caucasus.Baked on Brighton Beach.
Imeruli and sulguni cheese, tarragon, blue fenugreek and walnuts: the flavors of the Georgian mountains, made fresh in Brooklyn every morning.
03 · By hand
Folded by hand.Every single morning.
Dough rolled thin, filled, pleated and sealed by the same hands that have made it for years. Hold khinkali by the knot, sip the broth first, and leave the knots on your plate.

04 · The oven
Hot clay, open fire.Bread the way Tbilisi bakes it.
Shoti bread is slapped against the wall of a round clay oven, the tone, and comes out crisp outside and soft inside. The same dough becomes the lavash every shawarma is rolled in: chicken, pork or the mix, carved to order.

05 · The horn
The horn goes up.The table goes quiet.
At a Georgian supra the tamada raises the kantsi, a drinking horn, for the great toasts: to peace, to family, to those who came before. A horn cannot be set down, so it is emptied in one go. Bring your celebration to Genatsvale: party trays for two to forty, with shawarma, khachapuri and everything in between.
